WEBCasterly Rock has been occupied long enough that it's no longer viable as a mine. Frankly Casterly Rock's mines probably went dry long before even Aegon's Conquest. I have a personal theory that there is a store of gold the Lannisters keep locked as a wellspring of money they occasionally tap.
